Why? The short answer is that no matter how carefully you eat, it is very difficult to give your body all the nutrients required to keep these two killers at bay.</p>
<p>Pollution from all sources adds to inflammation in your body. Lets break it down. First you are absorbing a toxic load of pollutants every day from your environment. We know about car exhaust and power plant emissions. Did you know that the carpet in your house and the glue in your furniture also give off toxic gasses over time? Plastic packaging leaches into food. We use endless amounts of cleaners and chemicals that both leave residues that evaporate and also pass directly through our skin.</p>
<p>Do you know about the lecture given on this topic where the teacher took off her shoes and stood in a pan of cut garlic? In the course of her lecture, the students could not avoid the unmistakable scent of garlic on her breath! Yes &#8211; your skin absorbs a wide range of natural and man-made chemicals. The next time the bottle of cleaner says to wear gloves when using &#8211; wear them! Your immune system struggles to cope with this toxic assault on a daily basis.</p>
<p>This is a large contributor to chronic inflammation. Your immune system (see the page on Inflammation) is designed to defeat these kind of assaults. The &#8220;weapons&#8221; it uses are special molecules called antioxidants. Your body makes antioxidants out of nutrients from food, and gets them fully-formed from what you eat.</p>
<p>But there is a problem. Food today is not as rich in antioxidants and necessary nutrients and trace minerals as it once was. First, too much of what we eat is processed in ways that remove these key nutrients. Second, even unprocessed whole foods grow in conditions that do not produce the needed nutrient content.</p>
<p>Modern growing practices have been equated to &#8220;soil mining&#8221;. The soil is more and more depleted of the nutrients you need to be healthy. The plants can artificially be forced via chemical fertilizers to grow big and beautiful &#8211; but  they do not absorb or store the nutrients you need. These were long ago removed from the soil.</p>
<p>Further &#8211; the natural resistance of the plants to pests and disease has been replaced by the use of chemical pesticides. These produce big beautiful supermarket produce without blemishes. The plants and trees also absorb some of the pesticides inside &#8211; just like your skin can. No amount of washing will remove it.</p>
<p>Fruits and vegetables help fight insulin resistance and chronic inflammation. Furthermore, most of the anti-oxidant value in a fruit or vegetable is developed in the ripening process. Today, most produce is picked green &#8211; before it ripens. It is then shipped around the world to your grocery store. What ripening it gets happens during transport, not on the plant where antioxidant production takes place.</p>
<p>So that big beautiful apple or pepper from the store does not have nearly the same nutritional value the same fruit or vegetable had 50 years ago. This reality supports eating organic produce, and supporting local producers who can get you vine-ripened fruits and vegetables in season. However, not enough of us do this often enough to feed our bodies in a way that overcomes the toxic load we are absorbing daily.</p>
<p>Meat from pastured cattle fights insulin resistance and chronic inflammation. The same story is true for modern meat production. A cow on the range 50 years ago ate a wide variety of plants with many different nutrients. It got more exercise doing so. This produced meat that had a higher nutrient content, and was leaner. The fats produced were of a healthier kind.</p>
<p>That same cow today is restricted to a feedlot, with feeds designed to make it grow fast and fat. Hormones are added for this purpose. The meat produced looks wonderful, but does not have the same nutrient content.  The fats are of a less healthy kind &#8211; (Omega 6s vs Omega 9s). It has a hormone and pesticide load from modern animal husbandry practices. The same story is true for chicken, pork, etc&#8230;.</p>
<p>In the modern world, toxic pressure on our bodies is increasing. Insulin resistance and chronic inflammation inside combine to overwhelm our antioxidant network. Toxins from the environment add to the pressure unnoticed. The antioxidants available from our food is decreasing &#8211; even when we try to &#8220;eat right&#8221;.</p>
<p>You must get the very dense forms of proper nutrition you need.  The research is clear. Everyone on the planet should be taking a very high quality multi-vitamin. But the nutrient load in a multi-vitamin is usually based on the &#8220;recommended daily allowance&#8221; or RDA.
